In most cases, sorting by topic probably makes the most sense because it will give you the most opportunities for on-page optimization. This means that your subfolders are titled things like, in our case, Accounting, Financial Modeling, that sort of thing. The content on your page will also contain keywords like "accounting," "financial modeling" instead of "ebooks," "videos," which aren't keywords optimized for whatever your site is about.
